No single experiment can confirm a duality if it tests only one aspect of the duality, the double slit interference provides evidence for the wave nature of light. However, other phenomena such as Compton scattering and the photoelectric effect provide evidence for quantum (photon) theory. Besides matter also displays a wave particle duality, just its not as popularized as light so it actually follows the same patterns (look up De Broglie's postulates)

Yes the beam would lengthen vertically and if you move the projection board closer and further away it would change horizontally.

You're not the only one having problems with both issues. The Double slit experiment suggests particles act as waves "duality". The single slit exp. explains the uncertainty of the momentum of the particle/wave and it's position....Hopefully someone will correct the flaws in the theory so we wouldn't have to explain it at all :

the slit was vertical and the beam broadened horizontally, if the slit was horizontal would the beam lengthen vertically?

Why am I reminded of the Double slit experiment... Is the principle of interference patterns employed in this theory too?

It is non-intuitive because it is all wrong! Einstein hated the theory and called it nonsense (to put it nice). Einstein would roll over in his grave if he knew we continued to teach this.

You cannon know where a quantum particle exists at a given time and also know it's speed/direction of travel. When the slit becomes skinnier than the wavelength itself, it allows you to know the lights particles place in space so precisely that you effectively break the lights ability to act as a lone particle.
